Food Fun Friday...Rolo Chocolate Cookies




Oh, so yummy caramel filling!


It's been a while since I did a Food Fun Friday, but this morning, while I was waiting for my characters to get their dialogue figured out, I decided to make a new cookie. It came out so well I decided to share...and of course I took pictures of the process with blogging in mind. LOL

So here you go!


INGREDIENTS:
Ingredients-sugars in one bowl; flour, cocoa,
and baking soda in the larger bowl
I refrigerated the unwrapped Rolos overnight

2 1/4 c. flour
3/4 c cocoa powder
1 tspn baking soda
1 c sugar
1 c packed brown sugar
1 c butter, softened
2 tspn vanilla
2 eggs
40 Rolo candies, unwrapped (approx. 5 rolls)
1 c chopped nuts (optional)
1 tspn sugar (optional)




DIRECTIONS:

1. Preheat oven to 350 F

1.5-Butter and sugars ready to mix.
2. Beat sugars and butter until light and fluffy
(doesn't look too fluffy...maybe because of the brown sugar)

3. Add eggs and vanilla, beat well.


4. Add flour, cocoa, and baking soda;
blend well.
4.5- Well-blended dough ready for the
refrigerator.



















5. Refrigerate dough for 1-3 hours.

6. Roll 1 tbs of dough in palm of hand to
form a ball.
7. Press one Rolo into ball, covering it completely


















8. Flatten bottom of cookie into palm of hand

9. Press flattened side of cookie onto
an ungreased cookie sheet
OPTIONAL
10. If putting the nuts on the cookies, press the unflattened side into 1 tbsp sugar mixed with 1 c chopped nuts, then press cookies, nut side up on ungreased cookie sheet 


10a. Bake for 9 minutes
10b. Bake for 9 minutes



















12. Remove from oven, allow them to cool for 5 to 10 minutes

13. ENJOY!!
